By Norma Dittman Bryon Thurston, a native of Fulda, and his wife, Amy, along with daughter Kelsie Dick, have been operating the former Antonio’s in Fulda under the new name of 507 Burger and Pizza since Monday, December 15th, 2025.

A 1993 graduate of Fulda High School, Bryon worked for a decade at Highland Manufacturing in Worthington. He began driving truck over-the-road, and soon owned his own trucks. “I had three trucks, but when we left Wyoming I was down to one truck, and I am going to keep that one,” Bryon stated. “We wanted to move back to this area, and accomplished that in 2023.”

When asked about the purchase of the restaurant, Bryon explained that he had stayed in contact over the years with Antonio’s 30-year owner, Shirlene Christians. At one point, she indicated to him that she was getting ready to sell the restaurant and retire. “I told her to keep us in mind when she got to that point,” Bryon said. “About a year ago, Shirlene told Bryon that it was time for her to retire, and we began working on purchasing the restaurant from her.

“Our daughter Kelsie is the one with the strong interest in the food industry. She has had an interest in foods since she was very young. In fact, we gave her a chef’s knife on her 13th birthday. She has a degree from a culinary art school in Oregon. Our plan is that, as we age, Kelsie will take over the restaurant. We plan to keep it in the family.”

Kelsie and her husband, Grayson, moved to the Fulda area in October of last year. While waiting for the opening of 507 Burger and Pizza, the family was busy creating and tasting new recipes for their menu. They currently have approximately four to five notebooks full of culinary delight recipes that they have developed and taste-tested. The plan is to rotate recipes - much of it depending on the season of the year.

“Many of the recipes are ones that I have enjoyed, or my family has enjoyed, when trucking or traveling, and we have developed our own recipes from our favorites. We hope our customers will enjoy them as much as we do,” Bryon explained.

As a “for instance”, there is a meatball and pepperoni pizza that Bryon experienced in the Chicago area. We developed our own and it is still a favorite of mine,” Bryon said.

Open hours are Mondays through Saturdays 6:30 a.m. to 8:30 p.m., and Sundays 8:30 a.m. to 8:30 p.m. The early morning menu includes many favorite breakfast choices including hashbrowns, eggs, toast, pancakes, french toast, a breakfast sandwich, and omelets. Breakfast is served until 10:30 a.m.

Throughout-the-day menu choices are a large variety of burgers, sides, sandwiches, wraps, salads and pizza. All burgers are made with a quarter

pound patty on a house baked bun.

“We also offer catering services and will gladly answer any questions about that service,” Bryon stated. “We are here for the community and truly hope that folks will come in for a 507 Burger and Pizza experience.”
